On warm days like today, nothing sounds better than getting a few friends together and having a few light, tasty treats!
Our drink of choice is a super refreshing spa water like Cucumber and Mint!
Mint contains rosmarinic acid, a substance with antioxidant, antiviral, antibacterial and anti-inflammatory actions, and cucumbers are a good source of vitamins C and K. So it tastes great and makes you feel great too!
To make this yummy cucumber-mint spa water, wash, dry and thinly slice one cucumber. Make sure to keep the skin on as most of the beneficial nutrients are in this part of the vegetable. Wash and dry one sprig of fresh mint leaves, then bruise them slightly with a spatula or the back of a wooden spoon.
Add the cucumber and mint to a pitcher of about two liters of water. Chill the water in the refrigerator for one to two hours to allow the flavors to meld. For the finishing touch, find a great decorative pitcher that shows off this beautiful mixture!

But no party is complete without something fresh to snack on! Our Lemon, Celery, and Parmesan salad
This is what you'll need:
- 4 stalks celery, thinly sliced, plus 1/4 cup celery leaves
- 2 tablespoons extra-virgin olive oil
- 1/2 teaspoon finely grated lemon zest, plus 1 teaspoon fresh lemon juice
- Kosher salt and freshly ground black pepper
- 1 ounce Parmesan, shaved
Toss the celery, celery leaves, oil, lemon zest and juice, and ¼ teaspoon each salt and pepper in a medium bowl. Gently toss in the Parmesan. Serve cold or at room temperature.
