With this heat wave, our craving no cook meals has definitely set in! We're putting our traditional summer salads aside and trading them in for beautiful, healthy meals you can make in a pinch. Dig in!
1. Shrimp and Avocado Mexican Ceviche - This traditional ceviche recipe is incredibly easy to follow and with that generous helping of avocado, it's also a really satisfying way to beat the heat (via Gooseberry Mooseberry).
2. Summer Gazpacho - Who can resist a good gazpacho recipe? We can't! It's healthy and delicious and by adding a dollop of greek yogurt on top you can bring a little creaminess that this recipe is often lacking (via Jelly Toast).
